- 1 cup Blueberries
- water
- sugar (to taste)
- 2 cups rolled oats
- 1 cup chopped Nut (almonds, walnuts or hazelnuts)
- 2 cups Raspberries
- powdered sugar (to taste)
- 14 ozs Soy yogurt

Preparation steps
1.
Heat the blueberries, water to just cover and sugar in a pan over a medium heat until the sugar has dissolved. Bring to a boil, reduce the heat and simmer gently until the blueberries have softened, but are still whole. Set aside to cool completely.

Toast the oats and nuts in a dry frying pan until lightly golden. Put into a bowl and set aside to cool.
3.
Puree the raspberries in a blender and press through a sieve to remove the seeds. Sweeten to taste with icing sugar. Set 4 tablespoons aside for the topping.

Stir half the oats into the larger amount of raspberry puree and divide between 4 serving glasses.
5.
Spoon a layer of yoghurt on top. Cover with a layer of oats and all the nuts.
6.
Add a spoonful of yoghurt and top with the reserved raspberry puree.
7.
Spoon the blueberries on top and chill until ready to serve.
