- 1 chicken (ready-to-cook, approx. 1.4 kg, jointed)
- 2 Tbsps olive oil
- ⅜ cup dry white wine
- 3 garlic cloves (halved lengthways)
- 2 bay leaves
- 1 bunch parsley (chopped)
- 2 Sage (chopped)
- 1 sprig Lemon balm (chopped)
- 1 organic lemon (zest grated)

Preparation steps
1.
Heat the oven to 190°C (170°C in a fan oven), 375°F, gas 5.
2.
Season the meat with salt and ground black pepper and place skin-side down in a roasting tin. Drizzle with oil and add a small cup of water and the wine. Add the garlic and the bay leaves and braise in the oven for around 20 min.
3.
After 20 min turn the chicken and baste and add the herbs and the lemon zest. Braise for a further 25-30 min until done.
