- 3 cups black beans (soaked overnight in plenty of cold water)
- 2 Tbsps vegetable oil
- ¾ inch fresh ginger (finely grated)
- 1 clove garlic cloves (pressed)
- 1 onion (finely diced)
- ⅓ cup flour
- 1 ⅓ cups Prawn
- Palm oil (for deep frying)

Preparation steps
1.
Drain the beans and boil in fresh water for around 1 hour, then drain and leave to cool.

Heat the oil in a frying pan, fry the ginger, garlic and onion until translucent, then remove from the heat.

Peel the beans by rubbing them against one another. Blend the beans with the onion mixture in a mixer to form a fine purée. Mix in the flour and season well with salt and ground black pepper. Add the prawns and mix together.

Heat the oven to 80°C (60°C in a fan oven), 175°F, gas 1/4.

Heat the palm oil in a wide-based pan. (The oil is hot when small bubbles appear around a wooden spoon dipped into the oil). Form small rounds from the bean mixture and fry in batches in the hot fat for 2-3 minutes on each side. Drain briefly on cooking paper and keep warm in the oven.
