1 egg
cup butter (cut into pieces)
2 cups Gouda (finely grated)
¾ cup chopped Walnut
2 tsps Cumin

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.

Mix the flour and the baking powder in a mixing bowl and make a well in the middle.
3.
Crack the egg into the well and place the butter around it. Sprinkle 175g|6oz cheese on top and quickly knead everything together to form a smooth, non-sticky dough. If necessary add a little water. Shape the dough into a ball and wrap in clingfilm. Chill for 1 hour.

Roll out the dough on a floured work surface and cut out rounds about 5 cm|2" in diameter. Place on the baking tray and sprinkle with the remaining cheese.

Mix together the walnuts and cumin and sprinkle on top of each biscuit. Bake for 10-15 minutes until golden brown. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
