¾ cup butter
cup runny honey
1 egg
2 ¼ cups Pumpkin (peeled, seeds removed and grated)
1 Banana (mashed)
cup soft light brown sugar
2 ½ cups all-purpose flour
2 tsps Baking powder
½ tsp baking soda
2 tsps ground cinnamon

Preparation steps

1.
Heat the oven to 180°C (160° fan oven) 350F gas 4. Grease and line a 900 g | 2 lb loaf tin.
2.
Put the butter into a bowl and microwave to melt for 1.5 minutes (or melt in a pan, then pour into a bowl).
3.
Add the honey and egg to the butter. Stir in the pumpkin, banana, sugar, flour and cinnamon. Beat together well until well blended.
4.
Spread the mixture into the prepared tin and and level the top.
5.
Bake for 45-50 minutes until the loaf is risen and firm and a toothpick inserted in the centre comes out clean.
6.
Cool in the tin for 5 minutes, then turn out and cool on a wire rack.
