This is a perfect breakfast or dessert recipe. It is sweet and contains fat calories, but it also is filling and contains nutrients and protein from the bananas and walnuts.
You can replace walnuts with other nuts and even add chocolate chips if you want it to be even sweeter.

- 1 ⅔ cups self-rising flour
- 1 tsp Baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 0.333 cup butter (melted)
- ½ cup milk
- 2 ½ ripe Banana
- 1 cup chopped Walnut
- To serve
- 4 Tbsps Crème fraiche
- 4 Tbsps honey
- ½ Banana

1 Small pot, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Whisk
Preparation steps

Preheat the oven to 190°C (170° fan) 375F, gas 5. Line a 12-hole muffin tray with paper cases.
2.
Sift the flour, baking powder, bicarbonate of soda and salt into a mixing bowl, then add the sugar.

Beat together the eggs, vanilla extract, butter and milk until combined.
4.
Mash the bananas well and stir into the egg mixture.
5.
Make a well in the centre of the dry ingredients and add the egg mixture with the walnuts.

Spoon the mixture into the muffin cases. Bake for 20 to 25 minutes until the muffins are golden and risen and springy to the touch. Cool in the tins for 5 minutes then place on a wire rack to cool.
7.
To serve, cut the half banana, skin on, lengthways and slice into 12 pieces. Spoon or pipe the creme fraiche on top of each muffin, drizzle with a little honey and top with a banana piece.
