- 18 ozs scaled Sardine
- 2 ¼ cups Ricotta cheese
- ⅞ cup fresh Goat cheese
- 3 Chocolate stick
- 1 lemon (juiced)
- 2 Tbsps Harissa
- 0.333 cup olive oil
- salt
- peppers
Preparation steps
1.
Rinse and dry the sardine fillets. Remove any remaining bones. Beat together the olive oil, harissa and lemon juice.

Place the sardine fillets in dish and add the marinade. Season, cling film and put in the fridge.
3.
Rinse the celery. Reserve a few leaves to decorate. Finely chop the rest.
4.
Mash the ricotta and chopped celery together with a fork. Thinly slice the goat’s cheese.
5.
Line 4 small charlotte molds with cling film. Line the sides with sardine fillets, then build the terrines with alternating layers of sardine fillets, ricotta and goat’s cheese until all the ingredients are used.
6.
Cover the terrines with cling film and put in the fridge for 3 hours or longer.
7.
Remove the terrines from their molds, decorate with celery leaves and serve with a ice plant salad.
