Preparation steps

Whisk together the lemon zest, juice, mint and extra virgin olive oil and set aside.

Heat the sunflower oil in a frying pan and cook the courgettes until soft. Stir in the lemon and mint mixture until well combined. Season to taste with salt and pepper.
3.
Toast the bread slices and spoon the courgette mixture on top. Scatter with the cheese and garnish with chives.
