- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 1 clove garlic cloves (crushed)
- salt
- 6 cups baby Spinach (washed)
- 3 cups vegetable stock (hot)
- ⅔ cup 2% milk
- 0.333 cup cream (48% fat)
- microgreen (to garnish)
- freshly ground peppers
Product recommendation
Try substituting half of the spinach for kale or Swiss chard.
Preparation steps
1.
Heat the oil in a large pan set over a medium heat until hot.

Add the onion, garlic and a pinch of salt and cook gently for 5 minutes until softened.

Add the spinach, stir well, and cover with the stock and milk. Cook until simmering, then continue to cook steadily for a further 5 minutes.
4.
Add the cream, stir well, and cook for 2 minutes Do not boil. Blend with an stick blender until smooth.
5.
Season to taste with salt and pepper and ladle into bowls. Garnish with micro salad on top before serving.
