- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 onion (chopped)
- 32 ozs Zucchini (chopped)
- 3 cups vegetable stock
- To garnish
- 3 Tbsps Crème fraiche
- Hibiscus flower

Preparation steps
1.
Heat the butter and oil in a large pan and gently cook the onion and courgettes in the butter and oil over a low heat for 7-8 minutes until soft.
2.
Season with salt and pepper. Add the stock and bring to a boil. Reduce the heat and simmer for 15 minutes. Allow to cool slightly.
3.
Blend the mixture in batches in a blender or food processor until smooth.
4.
Return to the pan and reheat.
5.
Ladle into 4 warm serving bowls and add a swirl of creme fraiche. Garnish with hibiscus leaves.
