1 onion
1 Tbsp clarified butter
600 grams Sauerkraut
5 Juniper berries
2 bay leaves
250 milliliters dry white wine
salt
freshly ground peppers
600 grams starchy potatoes
2 Tbsps butter
200 milliliters milk
1 pinch freshly grated Nutmeg
300 grams purple Grape
1 white onion
4 Smoked pork chops
vegetable oil

Preparation steps

1.

Peel onion and dice. Heat ghee in a pan and saute onion until soft. Add sauerkraut, juniper berries and bay leaves and saute briefly. Add wine and bring to a boil. Reduce heat and simmer, covered, for about 30-40 minutes. Season with salt and pepper.

Scrub potatoes and cook is salted water for about 30 minutes or until knife-tender. Peel and press through the ricer, add butter and hot milk. Season with salt and nutmeg. If puree is too dry, add more milk.

Rinse, halve and seeds grapes. Peel white onion and chop coarsely.

Heat 1-2 tablespoons of oil in a pan and cook smoked pork chops for about 4-5 minutes on both sides.

Arrange chops with mashed potatoes and sauerkraut on plates, sprinkle sauerkraut with grapes and white diced onions. Serve.
