- 1 cup fresh Basil (plus a few more for garnish)
- 2 garlic cloves (peeled and crushed)
- ¼ cup Parmigiano Reggiano (grated)
- ⅓ cup Walnut (chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup extra virgin olive oil
- 8 ozs Baguette (cut into sixteen 1/2-inch slices)
- 4 ½ cups vine ripened Tomatoes (diced)
- 3 ⅓ cups fresh, smoked Mozzarella (diced)

Preparation steps
1.
Preheat oven to 350º F / 175º C. In a blender or food processor combine basil, garlic, Parmesan, walnuts, salt, and pepper. Slowly add the olive oil to make a thick paste.

Place bread slices on a rimmed baking sheet and bake until crisp and lightly golden, about 12 minutes. Remove from oven and let cool.
3.
Once crostini is cool enough to handle, spread 1 teaspoon of pesto on each slice. Top with chopped tomatoes and mozzarella. Garnish with basil and serve immediately.
