- 3 Mozzarella (125 grams)
- 1 egg
- 2 Tbsps Pastry flour
- 4 Tbsps breadcrumbs
- 2 Tbsps olive oil
- 400 grams Cherry tomatoes
- 3 scallions
- 2 Tbsps olive oil
- salt
- peppers (freshly ground)
- 2 Tbsps Basil
Preparation steps

Rinse tomatoes and halve or quarter. Rinse, trim and cut scallions crosswise into rings. In a pan, cook tomatoes and scallions briefly in hot olive oil. Season with salt and pepper and mix in basil.

Beat egg in a deep dish. Place flour and breadcrumbs on separate plates. Drain mozzarella and cut into thick slices. Dip slices first in flour, then in egg and then coat with breadcrumbs. Heat oil in a heavy pan. Add mozzarella slices and fry over medium heat until golden-brown on both sides.
3.
Arrange mozzarella on plates and serve with wilted tomatoes.
