- 4 Beefsteak tomato
- salt
- 4 garlic cloves
- 1 onion
- 4 Tbsps breadcrumbs
- 3 Tbsps olive oil
- 1 Tbsp white balsamic vinegar
- 4 sprigs rosemary
- 3 sprigs Basil
- 1 pinch Chili powder
- 12 Tbsps Tapenade
- 24 thin slices Scamorza (smoked mozzarella)

Preparation steps
1.
Rinse the tomatoes and cut into 5 slices each. Season with salt. Peel the garlic and onion and mince. Mix with the breadcrumbs, olive oil and vinegar.
2.
Pluck off a few rosemary needles and mince. Pluck off 4 basil leaves and mince. Mix the rosemary into the onion mixture with the chili powder. Mix the basil into the tapenade. Alternately stack the tomatoes, onion mixture, mozzarella and tapenade into 4 stacks.
3.
Season with pepper. Cut the remaining basil into very thin strips. Garnish the stacks with herbs.
