Ingredients

For the pastry
500 grams Pastry flour
1 packet Dry yeast
250 milliliters warm milk
125 grams softened butter
100 grams sugar
salt
For the topping
800 grams Plum
50 grams clarified butter
50 grams Whole grain cracker
Pastry flour (for the work surface)
2 Tbsps powdered sugar (for dusting)

Preparation steps

For the pastry: Combine flour, dry yeast, milk, butter, 50 grams (approximately 1 2/3 ounces) of sugar and salt and knead to a smooth pastry. Cover and let rise for about 40 minutes in a warm place.

For the topping: Rinse, halve and pit plums. Melt butter and finely crumble cookies in a freezer bag. Combine butter nad cookies in a bowl and let cool.

Divide pastry into 12 equal portions, shape into balls and roll out on a floured surface to about 10 cm circles (approximately 4 inches).

Arrange pastry on a lined with parchment paper baking sheet, places plums on top, pressing gently, and let rise again for about 20 minutes, covered, in a warm place. Sprinkle with crumbles and remaining sugar and bake in preheated oven (electric oven at 175°C, gas mark 2) (approximately 350°F) for about 15 minutes. Remove from the oven, cool, dust with powdered sugar and serve.
