Preparation steps

Rinse, trim, and cut the scallions on a bias. Mix the ricotta and olive oil thoroughly. Season to taste with salt, pepper, and lemon juice. Add the scallions, minus 2 tablespoons into the ricotta mixture.

Rinse the tomatoes, and cut horizontally into slices. Arrange on small plates, and season with salt and pepper. Top the tomatoes with a dollop of the ricotta mixture, and garnish with the remaining scallions.
