- 28 ozs fresh, ripe Tomatoes
- 1 Red onion (peeled and thinly sliced)
- 1 handful fresh mint (coarsely chopped)
- 2 Tbsps white balsamic vinegar
- 3 Tbsps fresh Lime juice
- 4 Tbsps good-quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Rinse the tomatoes, trim and cut into large pieces.
2.
In a large serving bowl, combine the prepared tomatoes, sliced onion, and mint.
3.
In a small bowl, whisk the vinegar, lime juice, olive oil, salt and pepper. Drizzle dressing over the tomato and onion mixture. Toss gently to coat and allow to stand for 30 minutes at room temperature.
4.
Divide between serving plates. Season to taste with salt and pepper and serve.
