- 8 Tomatoes (thinly sliced)
- 5 ozs yellow Cherry tomatoes (quartered)
- ½ bunch Arugula
- 3 Tbsps olive oil
- 2 Tbsps white wine vinegar
- 1 tsp dried oregano
- salt
- peppers

Preparation steps
1.
Arrange the sliced tomatoes on a serving plate.

Scatter the cherry tomatoes over the sliced tomatoes. Add a few rocket leaves to the plate.
3.
Sprinkle with oil and vinegar and season to taste with salt and pepper. Sprinkle with oregano and leave to stand for about 10 minutes before serving. Serve with toasted white bread.
