- 4 mixed Heirloom tomato (a variety of colors is best)
- 2 cloves garlic cloves (peeled and finely minced)
- 1 Tbsp fresh, finely chopped Basil (plus extra for garnish)
- 2 Tbsps balsamic vinegar
- 3 Tbsps extra virgin olive oil
- 1 tsp salt (or to taste)
- ¼ tsp freshly ground Black pepper (or to taste)
- 2 Tbsps finely chopped, shelled Pistachio

Preparation steps
1.
Rinse tomatoes and cut away the cores. Thinly slice each tomato and arrange in a shallow 11 x 7-inch non-reactive baking dish.

In a small bowl, combine garlic, basil, balsamic vinegar, olive oil, salt and pepper, whisk to blend. Drizzle over the tomatoes, lifting the tomatoes so the dressing to completely coat the tomatoes. Cover and refrigerate for at least 1 hour before serving.
3.
Sprinkle with chopped pistachio nuts just prior to serving.
