- For the apples
- 2 Apple
- ¼ cup caster sugar
- ¼ cup Apple juice
- ⅜ cup water
- 6 tsps apple sauce
- For the cookies
- 1 cup all-purpose flour
- ⅓ cup superfine caster sugar
- 2 egg yolks
- ⅓ cup unsalted butter (softened)
- ½ tsp Ginger powder
- ¼ tsp grated Nutmeg
- To decorate
- grated lemon zest

Preparation steps
1.
For the apples: cut 1-2 of the apples into rings. Cut the remaining apple into small wedges.
2.
Heat a frying pan and add the sugar. Melt, without stirring, to a light caramel. Add the apples to the pan and cook for a few minutes.
3.
Add the apple juice and water, cover and cook over a low heat for 10 minutes. Remove from the heat and allow to cool.
4.
For the cookies: place all the ingredients in a mixing bowl and mix well to a smooth dough.

Roll out the dough between 2 sheets of non-stick baking paper to about 5mm|1/4" thickness. on a sheet of baking parchement. Chill, covered for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
7.
Cut out 6 discs and place on the baking tray. Bake for 15 minutes until golden.
8.
Press an apple ring on each cookie as soon as they come out of the oven. Spoon about a teaspoon of apple sauce into the centre of each apple ring. Spoon a little syrup over the top and sprinkle with lemon zest. Leave to cool.
9.
Serve with apple wedges.
