- 6 sprigs Lemon thyme
- 1 large, cooking Apple
- 1 Tbsp lemon juice
- 4 Pork chop (each approx 150 g)
- salt

- 4 Tbsps olive oil
- 4 Tbsps whole-grain Mustard
- 1 egg yolk
- 2 Tbsps breadcrumbs
- 1 Zucchini (sliced lengthways)
- 11 ozs Broccoli
- 3 ozs Green beans
- 1 Tbsp butter

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Pick off the leaves from 2 sprigs of thyme and chop finely.
3.
Cut the apples into quarters, remove the core, cut into thin wedges and toss in a bowl with the lemon juice.

Season the chops with salt and pepper.
5.
Heat half the oil in a pan and brown the chops on both sides. Remove from the pan.
6.
Mix together the remaining oil, mustard, egg yolk, breadcrumbs and thyme leaves to a paste and spread on the chops. Place in a baking dish and place the apple slices on top.

Bake for 20-30 minutes until the chops are cooked through.

Cook the green beans in a pan of boiling salted water for 6-8 minutes until tender. After 3 minutes, add the broccoli florets. Then drain well.
9.
Heat the butter in a pan and cook the courgettes for 2 minutes. Add the beans and broccoli and cook for 1-2 minutes. Season to taste with salt and pepper.
10.
Place the chops on warm serving plate with the vegetables and garnish with the remaining thyme.
