- 18 ozs Beef fillet
- salt
- freshly ground Black pepper
- olive oil
- 1 Tbsp chopped Basil
- 1 Tbsp chopped parsley
- 2 large, ripe Tomatoes (diced)
- balsamic vinegar

Preparation steps
1.
Season the beef generously with salt and pepper.
2.
Heat a thin layer of olive oil in a frying pan. Put the fillet in the pan and slowly turn it until it's browned on all sides.
3.
Wrap the beef tightly in cling film and set aside to cool for at least 20 minutes.
4.
Slice the beef and put the beef slices on a serving plate. Sprinkle with the basil, parsley and tomatoes. Drizzle with the meat juices and a little balsamic vinegar and oil.
5.
Heap the salad leaves in the middle and serve immediately.
