600 grams waxy potatoes
1 onion
150 grams Bacon (sliced)
150 grams button Mushroom
3 Tbsps olive oil
6 eggs
salt

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Peel the potatoes and dice. Peel the onion and chop finely. Cut the bacon into thick strips. Clean the mushrooms and cut in half.

Cook the potatoes in hot oil in an ovenproof pan for about 10 minutes. Remove from the pan and sauté the onions and bacon until golden brown. Add the mushrooms and sauté until brown. Return the potatoes to the pan, season with salt and pepper. Beat the eggs with the salt and pepper and pour over the vegetables and bacon. Bake in the oven for about 15 minutes, until golden brown. Remove from the oven and serve immediately
