- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 2 cups canned Tomatoes
- thyme
- salt
- peppers

- 4 cups fresh Tortellini (such as ham and cheese or spinach and ricotta)

Preparation steps
1.
Heat the oil in a pan and sweat the onion and garlic without colouring.
2.
Add the tomatoes and a splash of water and simmer for 10 minutes, then stir in the thyme leaves and season.
3.
Cook the pasta in boiling salted water according to packet instructions. Drain.
4.
Toss the pasta with the sauce and serve.
