2 Limes (grated zest and juice)
3 Tbsps Fish sauce
1 Tbsp light soy sauce
1 tsp sugar

20 Tiger prawn (raw)

1 Pot, 1 Small pot, 1 Skillet, 2 Bowls, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Sieve, 1 Slotted spatula, 1 Plastic wrap

Preparation steps

Mix together all the ingredients except the prawns in a small bowl. Season with plenty of freshly ground black pepper and salt if needed.

Add the prawns, mix well and leave to marinate for 30 minutes.

Heat a griddle pan until hot. Thread the prawns onto wooden skewers and cook for 2-3 minutes on each side or until cooked through.
4.
While the prawns are cooking, place the marinade in a small pan and bring to a boil. Let reduce for 2 minutes then pour into a small pot and serve with the prawns as a dipping sauce.
