- 18 ozs Beef brisket (trimmed of fat)
- ½ Savoy cabbage (small)
- 6 cups Beef broth
- 4 carrots
- 1 Leek
- ½ bunch parsley
- ½ Celery root
- 4 potatoes
- salt
- 4 peppercorns
- clarified butter

Preparation steps
1.
Cut meat into small cubes.
2.
Rinse cabbage, remove hard stalk and cut into strips. Peel and slice carrots. Peel celery and potatoes, cut into small pieces. Rinse leek and cut into rings.
3.
Heat clarified butter in a large saucepan. Saute all vegetables briefly and season with salt. Add meat and mix well. Add peppercorns and broth and simmer for about 50 minutes on low heat.
4.
Sprinkle with freshly chopped parsley and serve.
