800 grams shrimp ready to cook (peeled and de-veined)
2 Fennel bulb
4 yellow Plum
2 Tbsps olive oil
1 tsp honey
2 Tbsps Orange juice
2 Tbsps white wine
50 milliliters Vegetable broth
50 grams freshly grated Horseradish
salt

Lettuce
Chervil

Preparation steps

Rinse the fennel, cut in half and and remove the stems, setting them aside for garnish. Remove the inner core from the fennel halves, then cut the halves into 2 cm (approximately 1 inch) wide strips.

Rinse the plums, remove the pits and dice.

Cook the fennel and diced plums in butter over low heat until glassy. Add the honey. Deglaze with the broth, white wine and orange juice. Bring to a boil and allow the liquid to reduce, then add the shrimp. Cover and cook for about 4 minutes. Season with salt and serve in bowls, with grated horseradish on top.

If desired, garnish with the fennel stems, lettuce and chervil. Serve immediately.
