- 600 grams shrimp (ready to cook (peeled and deveined)
- 3 Nectarine
- 3 Tomatoes
- 3 Tbsps olive oil
- 1 Tbsp lemon juice
- salt
- freshly ground peppers
- 1 pinch sugar
- 4 Tbsps Chile oil
- 1 Tbsp freshly chopped oregano
- 2 Tbsps mixed Fresh herbs (z. B. mint, shiso, cress, etc.)

Preparation steps

Rinse the shrimp and pat dry. Rinse the nectarines, cut in half, remove the pit and cut into bite-size cubes. Rinse and core the tomatoes and cut into 2 cm (approximately 1-inch) cubes. In a bowl, mix the olive oil with the lemon juice and season with salt, pepper and a pinch of sugar.

Thread 4 shrimp on each skewer. In a shallow dish, mix the chile oil with the chopped oregano, pepper and salt, add the skewers to the dish and turn to coat. Let stand 30 minutes. Heat the grill or a grill pan to medium and grill the shrimp, turning the skewers as they cook, until just cooked through, 3-5 minutes. Add the tomatoes, nectarines and herbs to the bowl with the lemon dressing, toss to combine and serve with the shrimp skewers.
