10 ½ ounces Pastry flour
1 teaspoon Baking powder
8 ounces butter
8 ounces sugar
2 eggs
1 generous pinch lemon zest
1 Vanilla bean (seeds removed)
1 pinch salt
Pastry flour (for rolling out)
sanding sugar (for sprinkling)

Preparation steps

1.

Combine the flour and baking powder in a large bowl and make a well in the center.

Add the sugar, eggs, lemon zest, vanilla bean seeds, and salt to the well and distribute the butter over everything. Knead with hands to form a smooth dough. Cover with plastic wrap and refrigerate for about 30 minutes.

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Roll the dough out onto a floured surface to approximately 1/8-1/4 inch thick. Cut into the shapes of your choice using cookie cutters, place onto the prepared baking sheet and sprinkle with sanding sugar. Bake for 10 minutes, until lightly golden.

Cool on a wire rack and store in an airtight container.
