250 grams Conchiglie (large pasta shells)
salt
freshly ground peppers
2 shallots
4 Tbsps olive oil (cold pressed)
2 red Bell pepper
2 large Tomatoes
1 Zucchini
6 Kiwi
2 Tbsps thyme
1 Tbsp honey
16 shrimp (peeled, ready to cook)
2 Tbsps Lime juice

Preparation steps

Cook the pasta in plenty of salted water until al dente and drain.

Peel and finely chop the shallots. Rinse and trim the bell peppers, remove seeds and ribs and dice finely. Rinse and trim the tomatoes and zucchini and cut into small cubes. Peel the kiwis and cut into small pieces.

Fry the shallots in some oil over low heat. Add the bell peppers, tomatoes, zucchini, thyme and 1/2 cup of water and cook for about 5 minutes. Add a little extra water if necessary. Season with honey, salt and pepper and fold the in the kiwis.

Drizzle the prawns with lime juice and fry in olive oil for about 4 minutes until golden. Season with salt and pepper.

Transfer the pasta to plates and top each with the vegetables and kiwi mixture.

Add the prawns and serve immediately.
