2 handfuls baby Spinach
2 red Bell pepper
1 garlic clove
4 Tbsps olive oil
salt
freshly ground peppers
1 shallot
2 Tbsps white balsamic vinegar
2 scoops Mozzarella (250 grams)
4 Sesame seed rolls
2 tsps honey

Preparation steps

1.

Rinse and spin dry spinach. Rinse bell peppers, halve, remove seeds and ribs and cut into strips. Peel garlic and chop finely. Heat 2 tablespoons of oil in a pan and saute peppers and garlic for 2-3 minutes. Season with salt and pepper and set aside.

Peel shallot and chop finely. Combine with remaining oil and balsamic vinegar. Season with salt and pepper, toss spinach with the dressing.

Cut mozzarella into slices. Arrange mozzarella slices on bottom halves of sesame rolls. Drizzle with honey and add spinach and pepper. Top with remaining mozzarella and sesame roll tops. Serve.
