Ingredients

- 400 grams small Cuttlefish (ready to cook)
- 500 grams mussels
- 150 milliliters dry white wine
- 1 bay leaf
- ½ tsp Juniper berries
- 400 grams Fusilli
- salt
- 4 Tomatoes
- 1 garlic clove
- 2 Tbsps freshly chopped parsley
- Chili powder
Preparation steps
Rinse squid and drain. Scrub and trim mussels thoroughly.
Boil wine in a pot with bay leaf and juniper berries. Add squid and mussels to the pot, cover and simmer for about 8 minutes. Then drain, collect broth and leave to cool. Cut squid into pieces.
Cook pasta in a pot of salted water until al dente.
Preheat the oven to 200°C (approximately 400°F).
Rinse tomatoes, cut into quarters, remove seeds and dice. Peel garlic and chop finely. Mix seafood in a large bowl with drained pasta, garlic, tomatoes and parsley. Add 3-4 tablespoons of reserved cooking juices to the bowl, add oil, mix and season with salt and chili powder. Place 4 pieces of 30x30 cm (approximately 12x12 inches) parchment paper on a work surface. Divide seafood pasta mixture between 4 pieces of parchment paper. Place pasta mixture in the center of the parchment paper, pull up all edges into center around pasta mixture to create a bag, tie with kitchen twine and place on a baking sheet. Bake in the preheated oven for about 15 minutes. Serve immediately on plates.
