400 grams Orecchiette pasta
300 grams small, fresh Cuttlefish (or frozen)
600 grams clam (or 200 grams of canned mussel)
150 milliliters white wine
100 milliliters fish stock
1 garlic clove (finely chopped)
4 Tbsps crushed Tomatoes (canned)
olive oil (extra virgin)
salt
freshly ground peppers
1 small, red chili pepper (seeded and chopped)
1 Tbsp parsley

Preparation steps

Brush clams thoroughly under running water, discard all open shells. Place into a saucepan and add white wine, bring to a boil and simmer for about 5 minutes or until shells open (discard all unopened ones). Strain through a fine sieve, collecting the broth.

Heat 4 tablespoons of oil in a large pan and saute squid (thawed if previously frozen) for about 1-2 minutes. Add tomatoes, chile pepper and garlic and saute for a few minutes more. Add clam broth and fish stock and bring to a boil.  Add clams and simmer, covered, for about 2 minutes.

Cook pasta in plenty of boiling salted water until al dente. Drain and add to seafood pan, toss well. Add parsley and season with salt and pepper. Tansfer to plates and serve immediately.
