- 2 Tbsps olive oil
- 1 onion (chopped)
- 2 large carrots (peeled and diced)
- 1 bay leaf
- 1 ¼ cups Brown Lentils (soaked in cold water overnight and drained)
- ½ cup dry white wine
- 2 cups vegetable stock
- 1 small Squid (divided into parts)

Suggested variation; add 110 g / 4 oz / 2/3 cup pancetta lardons to the saucepan at the same time as the onion and carrot.
Preparation steps
1.
Heat the olive oil in a casserole dish set over a medium heat until hot.

Sweat the onion and carrot with the bay leaf and some salt for 4-5 minutes until softened.

Add the lentils, white wine and stock and boil for 5 minutes, stirring occasionally. Add the squid, stir thoroughly, and pour into a slow cooker.

Cover with a lid and cook on a low setting for 6 hours.

Adjust the seasoning to taste after 6 hours and discard the bay leaf.
6.
Ladle into a serving dish and garnish with the chopped chives and chive stalks. Serve immediately.
