- 4 pcs Sea bream fillet (each 180 grams)
- 1 Tbsp lemon juice
- Pastry flour
- 1 Tbsp clarified butter
- 2 Fennel bulb
- 2 carrots
- 100 milliliters dry white wine
- 1 shallot
- salt
- freshly ground peppers
- 1 Tbsp butter
Preparation steps
1.
Sprinkle sea bream with lemon juice and season with salt and pepper.

Trim and rinse the fennel, cut in half lengthwise, remove the stalk and cut the bulb crosswise into strips.

Peel and cut the carrots into thin sticks.
4.
Peel the shallots and chop finely, then saute in half of the butter until translucent. Add the fennel and carrots and season with salt and pepper. Add the white wine, cover and simmer about 5 minutes.
5.
Dredge the sea bream in flour, then sear in hot butter on each side for about 3 minutes in a pan.
6.
Arrange the vegetables on plates and top with the sea bream.
