- 400 grams fresh Sea bream fillet
- salt
- 2 Tomatoes
- 1 shallot
- 1 large Avocado
- 1 Lime (juiced)
- 1 Tbsp freshly chopped cilantro
- brown sugar
- cayenne pepper
- 2 Tbsps olive oil

Preparation steps

Rinse the fish, pat dry, and cut into small pieces. Blanch the tomatoes in boiling water. Remove from the water and peel. Remove the seeds, and finely dice. Peel and finely dice the shallots. Halve the avocado, remove the seed, and remove the pulp from the shell. Finely dice the avocado. Mix the lime juice with the chopped cilantro, some sugar, andsome cayenne pepper. Mix the lime juice mixture into the prepared ingredients. Mix well, and chill in the refrigerator for 20 minutes.

Remove from the refrigerator, and add the oil to the ceviche. Mix well until combined, and serve.
