- 4 large vine Tomatoes (cored and finely diced)
- 2 shallots (finely chopped)
- 1 ½ Tbsps flat-leaf parsley (finely chopped)
- 1 ½ Tbsps olive oil
- 1 tsp lemon juice
- 4 Sea bass fillet skin on (approx. 150 g | 5 oz each)
- 1 lemon (cut into slices)
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the grill to hot. Combine the tomato, shallot, parsley, half a tablespoon of oil, and the seasoning in a small mixing bowl. Cover and chill until needed.
2.
Place the sea bass fillets on a grilling tray and drizzle with the remaining oil. Sprinkle with salt and pepper and grill for 5 - 6 minutes, turning once, until the flesh is firm yet slightly springy to the touch.
3.
Serve the sea bass with spoonfuls of the salsa and lemon slices on the side.
