- 24 Scallop (without shell)
- 12 sprigs Lemongrass
- 1 organic Lime
- 2 Tbsps olive oil
- Sea salt
- peppers (from the mill)
- 6 sprigs cilantro

Preparation steps
1.
Preheat the oven to 140°C (approximately 325°F).

Rinse scallops and pat dry. Rinse lemongrass and cut off ends on an angle. Skewer 2 scallops on each lemongrass piece.

Rinse lime in hot water, wipe dry and finely grate zest. Squeeze juice from lime. Mix lime juice and lime zest in a bowl with oil and season with salt and pepper.
4.
Place scallops skewers on the center of a large piece of parchment paper. Drizzle with lime mixture. Rinse cilantro, shake dry and place on skewers. Pull parchment paper, fold and seal the packet well. Cook under the preheated oven broiler, watching carefully, for 15-20 minutes. Remove from the oven, place parcels on a plate and open just before serving.
