12 pimiento-stuffed green Olives
½ onion
6 Tbsps olive oil
200 grams Chorizo
12 Scallop (ready to cook)
salt
freshly ground peppers
1 Tbsp lemon juice

Preparation steps

1.

Drain the olives. Peel the onion and chop finely. Heat 1 tablespoon oil in a skillet and saute the onion until translucent, transfer to a bowl and stir in the olives.

Add the remaining oil to the skillet. Cut the chorizo into about 1/2 cm (approximately 1/4-inch) thick slices. Rinse the scallops, pat dry and toss with the lemon juice, season with salt and pepper. Saute over medium-high heat until lightly browned, 1-2 minutes per side. 

3.

Alternately thread the scallops and chorizo on skewers and thread an olive on top. Serve immediately.
