- 1 bunch Chervil (finely chopped)

- 1 large egg (beaten)
- 2 Tbsps plain flour

Preparation steps

Mix the chicken with the herbs, pepper, salt and lemon zest until thoroughly mixed.

Pour in enough beaten egg to bin, but don’t let the mixture get too wet.

With wet hands, form the mixture into 4 large patties. Chill in the refrigerator for 30 minutes.

Dredge lightly in flour, then cook in a little oil for 3-4 minutes per side, depending on thickness, until golden.
