These simple flatbreads are easy to make and gluten-free.
If you're not gluten-free, feel free to use all purpouse flour instead.
Ingredients

- 2 cups gluten-free all purpose flour
- 1 tsp xanthan gum (if not included in flour)
- 1 ½ tsps gluten-free Baking powder
- 1 tsp salt
- 1 Tbsp olive oil (plus extra for brushing)
- 1 large egg
- 1 large egg white
- ¼ cup warm milk
- ½ cup warm water
- coarse Sea salt
- coarse freshly ground Black pepper
Preparation steps
Heat the oven to 425°F. Line a large baking tray with non-stick baking paper and put it in the oven.
Slowly beat in 1/2 a cup of the warm water. The texture of the dough should be quite wet and sticky, but not runny. Add more water if needed.
Scoop the dough into 6 balls and place the balls on the baking tray. Dip your fingers in water and spread each dough ball into about a 5" round, starting in the center of the dough and working your way out. Leave the edge of the circle a little thicker than the middle. Press into the surface with the knuckles to make small depressions in the dough. Brush with olive oil and sprinkle with sea salt and black pepper.
