Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection. Line a 12-cup muffin tin with paper liners.

Cut the bacon into small cubes and mix together with the sauerkraut, season with caraway, salt and pepper.

In a bowl, mix the 250 grams (approximately 1/2 pound) of flour with 1/2 teaspoon salt, the baking powder and cheese. In another bowl, whisk together the oil, buttermilk and egg. Make a well in the flour mixture, add the oil mixture and stir quickly to combine. Spoon the batter about halfway into muffin tin. Spoon 1-2 tablespoons of the sauerkraut mixture into the center of each and cover with the remaining batter. Bake until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes.

To garnish, peel, halve and thinly slice the onions. Dust with the flour. Heat the oil in a skillet and working in batches, saute the onions until golden brown. Drain on paper towels.

Remove the muffins from the tins and garnish with the onions, serve warm or cooled.
