- 100 grams smoked Bacon
- 1 onion
- 1 bunch Chives
- 500 grams Quark
- 1 medium egg
- 100 milliliters vegetable oil
- salt
- freshly ground pepper
- 250 grams Pastry flour
- 2 tsps Baking powder
- 100 grams Peas (fresh or frozen)
- 12 Paper cupcake liners
Preparation steps

Dice the bacon and sauté until crisp. Peel and dice the onion, add the bacon and sauté briefly. Rinse the chives, pat dry and slice thinly. Whisk the quark, egg and vegetable oil together until smooth. Season with salt and pepper.

Stir the flour and baking powder into the quark mixture and mix until smooth. Fold in the bacon and onions, sliced chives and peas.

Line a muffin tin with paper baking cups and spoon the batter into the cups. Bake in an oven preheated to 200°C/180°C convection/gas mark 3 (approximately 400°F/350°F convection) for 35-40 minutes, until a toothpick inserted comes out clean. Remove from the oven and cool on a wire rack.
