800 grams Porcini mushroom
4 Tbsps Nut oil
4 shallots (finely chopped)
2 slices ham (finely diced)
2 garlic cloves (finely chopped)
2 Tbsps clarified butter
150 grams Spinach
salt

Preparation steps

1.

Wipe the mushrooms, remove the stems, and finely chop. Cut the mushroom caps into slices. 

2.

Thoroughly rinse the spinach in a little water. Remove from the water and rinse under cold water. Squeeze thoroughly, and finely chop. 

3.

Mix the shallots, diced mushroom stems, garlic, ham, and spinach. Season to taste with salt and pepper. Heat the oil in a pan, and sauté the spinach mixture, stirring constantly, for 10 minutes. 

4.

Heat the clarified butter in a pan. Cook the mushrooms in batches, each for 5 minutes. Season to taste with salt and pepper, then mix into the spinach and ham mixture.
