- 1 medium onion
- 30 grams Cashews
- Bell pepper 1 each yellow, red and green (about 500 g or approximately 1 pound)
- 2 ripe Apricot
- 1 Tbsp Canola oil
- 2 Tbsps Sour cream (10% fat)
- salt
- freshly ground peppers

Preparation steps
1.
Peel onion and chop coarsely. Chop cashews. Rinse peppers, remove inner white skins and seeds and then slice. Rinse apricots, remove pit and cut into strips.

Heat oil in a nonstick skillet. Saute onion and cashews until golden. Add peppers and cook for about 5 minutes, stirring often. Add apricot and saute for another 30 seconds.
3.
Remove pan from heat, stir in sour cream and season with salt and pepper. Serve with pan-fried meat.
