- For sausage
- 3 Apple
- 3 sprigs Sage
- 4 coiled sausages
- 3 Tbsps Pumpkin seed
- olive oil
- salt
- freshly ground peppers
- 100 milliliters Cider
- For mash
- 200 grams starchy potatoes
- 400 grams Pumpkin ( or Butternut Squash)
- 180 milliliters milk
- 2 Tbsps butter
- freshly grated Nutmeg

Preparation steps
1.
Preheat the oven to 200°C (approximately 400°F).

For the sausage, rinse the apples, quarter, core and cut into slices. Rinse the sage, shake dry and pluck the leaves.
3.
Place the coiled sausages and apple slices in a greased roasting pan. Sprinkle with sage leaves and pumpkin seeds. Drizzle with a little oil. Season with salt and pepper. Add the cider and bake for about 25 minutes.

For the mash, peel the potatoes and pumpkin and coarsely chop. Cook for about 25 minutes in boiling salted water.
5.
Drain the potatoes and pumpkin, let cool slightly and press through a potato ricer. Stir in the milk and butter until smooth. Season with salt, pepper and a pinch of nutmeg.
6.
Serve the sausages with the mash, apples and pumpkin seeds.
