For the pizza bases
500 grams Pastry flour
1 cube Yeast (42 grams)
3 Tbsps Goose fat
2 tsps salt
1 tsp sugar
Pastry flour (for working)
vegetable oil (for greasing)
For the topping
5 Tomatoes
2 Tbsps Tomato paste

freshly ground peppers
1 Broccoli
200 grams Bologna sausage (sliced)
3 scoops Mozzarella (125 grams)
½ tsp Red pepper flakes

Preparation steps

1.

For the pizza bases, combine all the ingredients with 300 ml warm water (approximately 1 1/4 cups) and knead to a smooth dough. Leave to rise in a warm place for about 60 minutes.

For the topping, rinse the tomatoes, remove the stems and chop. Place in a blender with the tomato paste and purée well. Season with salt and pepper.

Rinse the broccoli, separate the florets and blanch for about 3 minutes in salted water.

Preheat the oven to 240°C (approximately 475ºF).

Cut the sausage and the mozzarella into thin slices.

Divide the pizza dough into 6 portions and roll each one out on a floured surface. Transfer to a greased baking sheet.

Spread the pizza bases with the tomato purée. Distribute the drained broccoli, sausage and mozzarella over the top. Season with red pepper flakes and bake for about 20 minutes.

Serve immediately.
