Salted Potatoes with Mojo Sauce - Papas Arrugadas
For the potatoes, rinse them, place in a pan and cover with water. Stir in the salt and cook for about 25 minutes.
For the mojo sauce, trim and rinse the chile peppers and peel the garlic. Rinse the herbs, shake dry, pluck off the leaves and chop everything coarsely.
Combine all the ingredients and purée together. Season to taste.
Drain the potatoes, return to the pot and heat until all the liquid has evaporated and the potatoes are dry and wrinkled.
Serve the potatoes with the mojo sauce.
