12 small new Potato
2 Tbsps olive oil
1 cup Rock salt
1 ⅛ cups Sour cream
¾ cup Salmon Caviar (or lump fish roe)
lemon zest (from 2 lemons)
Dill (sprigs)

Preparation steps

1.
Heat the oven to 180C (160C fan) 350F, gas 4.
2.
Wash the potatoes thoroughly and rub with the oil.
3.
Scatter the rock salt onto a baking sheet and place the potatoes on top. Bake in the oven for 45 minutes or until the potatoes are tender.
4.
Scatter the salt onto a serving dish. Slice open the potatoes, place onto the serving dish and spoon a little soured cream into each one.
5.
Top the potatoes with the caviar, drizzle over any remaining cream, scatter over the lemon zest and garnish with dill sprigs.
