Preparation steps

1.

Squeeze the lemon squeeze into 400 ml (about 14 ounces) of water in a bowl.

2.

Peel the salsify and cut into pieces approximately 8 cm (3 inches) long. Put the salsify into the lemon water as soon as they are cut.

3.

Bring a large pot of salted water to a boil and add the sugar. Add the salsify pieces. Cook about 10 minutes over medium heat. Drain well, collecting the cooking liquid.

4.

Heat the butter in another pan, sprinkle in the flour, cook briefly, and deglaze with cream and 400 ml (about 14 ounces) of the cooking liquid from the salsify. Stir vigorously with a whisk and simmer for about 10 minutes over medium heat.

5.

Add the cheese spread and season with salt, pepper, and nutmeg.

Rinse and spin dry the parsley. Pick the leaves from the stems and chop fine.

To serve, heat the salsify in the sauce and serve sprinkled with parsley.
